Ingredients

Instructions
Garnish
  1. 1 packet of fried Shallot
  2. Chop 1 stalk of coriander. Do not bruise them
Speical sauce
  1. Mince ginger, garlic, chili padi and chopped coriander (1 stalk) and then stir mixture together until mixed well.
  2. Pour in mixture and a packet of Fermented Black beans into wok and stir fry with 2 teaspoon of oil until aromatic over medium fire.
  3. Add half glass of water and continue stirring (timing is to be self-estimation)
Instructions
  1. Remove all the blood from the fish.
  2. Remove Fish Slime with lime and salt. Wash and Wipe Dry.
  3. Marinate the fish with 2 teaspoons of soya sauce and a teaspoon of sesame oil.
  4. Slit 3 slashes on each side of fish Or Butterfly Cut the fish.
  5. Pre-boil Steamer. Steam fish. 500g=8mins 800g=10mins 1kg=12mins
  6. Remove residue sauce from steaming and leave fish aside.
  7. Pour special sauce on fish
  8. Garnish with Fried shallot and chopped coriander.
