150gm sea cucumber sliced into biting size
6 dried Chinese mushroom soaked
3 stalk spring onion
6 slices ginger
1 clove garlic
1 tablespoon oyster sauce
1 teaspoon sugar
1/2 teaspoon chicken stock powder
3 tablespoon siao sin wine
1 teaspoon sesame seed oil.
Instructions:
Step 1: boil 2 bowls of water add 3 slices of ginger and spring onion whites with a pinch of salt add in the sea cucumber and let it boil for 3 minutes to get rid of any smell.
Step 2 : heat up the wok and add in 2 tablespoons of cooking oil once hot add in a clove of slice garlic spring onion and ginger stir fried till fragrance, add in the sea cucumber and the dried mushroom add in the chinese wine stir fired it for a while. Add in the seasoning and add in 1 1/2 bowl of water or chicken stock cover the lit and turn to small flame and let it braise for 15mins.
Step 3: Once done pour it into a bowl and clean the wok and boil some water add salt sugar and oil and bring it to a boil.
Step 4: Add in the brocolli and cook it for 6 mins till soft. Rinse it and plate it on a shallow plate.
Step 5: Heat up the wok pour in the stock of the mushrooms and sea cucumber bring it to a boil a add in corn starch to thicken it add in a dash of sesame oil and Chinese cooking wine. Place the sea cucumber and Chinese mushroom on top of the brocolli and finally pour in the sauce and serve hot.
